Mar 14 Menu

 Baked oats - Healthy Breakfast - this was ok. I didn't love the texture of oat flour in this dish. I prefer baked oats that use whole oats instead. 

Dinner

Tues:

Savory pumpkin pasta sauce - makes way more than 4 servings, We got 7-8 from it.

Instant pot Cuban chicken - ok recipe.

Ham casserole - As written this recipe has an insane amount of butter & cheese (aka: fat, cholesterol, & salt). So I made some pretty significant changes to this recipe. Everyone ate it without complaining.

1) boiled veggies for 8 minutes 

2) used unsalted butter

4) cooked veg and ham in 1 tbsp butter 

5) for sauce, 1 tbsp butter, 3 tbsp flour and 1 1/2 cup milk,  no cheese, no salt

6) offered shredded cheese has a topping.

Mar 1 Menu

Apple cinnamon muffins - these were ok
 
Dinner:

Sun:
Creamy Tomato Basil Soup with Whole Grain Grilled Cheese Sandwiches

Mon:
BLT on home made bread
Grilled peppers & Onions

Tue:
Gumbo in a jiffy - added additional seasoning (cajun & garlic)
This was ok. I might make again because it was easy. Kids didn't like it (too tomatoey)
Bread

Wed:
Whole wheat spaghetti + Meatballs + Salad

Thurs:
Cranberry Maple Chicken  - it was ok. I guess we would eat it again
Roasted Garlic Parmesan Fingerling Potatoes - H didn't really like these.

Sat:
Neat Sloppy Joes - bland. Use BBQ instead of ketchup. Added Liquid smoke. Wouldn't make again.

Nov 2 menu

  Sorry I missed a week or two.  I was having issues accessing the site. As a side note, I didn't actually plan this week, but it is what we ate.

Cranberry bread - we adopted a large bag of cranberries, and this was a good way to use some.

Dinner
Sun:
Veggie Thai Red Curry with Jasmine Rice - Better than I thought it would be. The sauce is thin and soupy. I would maybe decrease the amount if I made again.
Cranberry orange relish - B just really wanted this because we had a lot of cranberries. He didn't use a recipe.

Mon:
Chicken Enchiladas - I've had better enchiladas. I found them to be very dry.
Jicama
Pomegranate

Tues:
Grilled Cheese This grilled cheese was pretty good.
Tomato soup

Wed:
Homemade spaghetti O's - Kind of fun and super easy. Flavor was fair, but very bland. I actually think real Spaghetti O's have more flavor. I'm not sure why, or what's missing from this one.
Salad

Thurs:
Loaded baked potato bar

Pizza

Sat:
Veggie stir-fry - This recipe is for Mongolian beef. B want it, but beef is sparse and expensive right now. We used this sauce with veggies (peppers, onion, broccoli, carrots, pea pods).

Oct 19 Menu

 Dinner:

Pork tenderloin carnitas tacos - I was not home to eat these. But other's said they were good.


Chili lime roasted sweet potatoes - these I hear were not that good


Mon:

Ravioli

Tues:

Lemoney Mediterranean chicken - people liked this


Wed:

Curried vegetable pot pie - I like this but make some adjustments. I decrease butter to 1 TBS. Add the flour with the milk and keep wishing until lumps are gone.  I also add a little ground ginger. I used frozen broccoli and cauliflower, so I didn't precook them. I decreased the boiling time of potatoes and carrots to 10-15 minutes.

Fri:

Eat whatever we can find


Sat:

Simple turkey chili - ok chili recipe. I have had better.

Chicken & bean enchilada casserole - not great. If I made a gain I would buy larger can of sauce; mix half into the chicken and poor the rest on top of the casserole so the top layer is dried out.


Sat:

Roasted veggie teriyaki bowls - this was well liked. kids voted for more broccoli.
