May 19 Menu

Tues:

Gingerbread waffles - good, but recipes only made 3 waffles, and we had to make a second batch

Stovetop cinnamon apples

Wed:

Baked orange chicken - needs way more sauce.  Had 1 lb chicken and with full recipe for sauce and it wasn't enough.  I also halved the sugar and white vinegar, and added some water.

Brown rice

Pulled pork tacos - these were really good

Sweet and spicy sloppy joes  I didn't realize this was a crockpot recipe, so I made this sauce in a skillet.  Everyone liked it.

Garlic oil sautéed pasta with broccoli

April 28 menu

 Weekend Breakfast:  

Italian pancakes - I made half the recipe. These were better than expected.  I little floury tasting, the fruit covers that up.

Lemon blueberry bread decreased sugar to 1/2 cup, and used oil instead of butter. I didn’t make the glaze.


Apple butter muffins used coconut oil instead of butter, and decreased the sugar to 1/2 cup.  These turned out okay, but I thought they were kind of oily.  If I made again I would try decreasing the fat to 1/3 cup.
