April 12th menu

 Breakfast:  

Cranberry orange muffin

Banana bread


Apple cinnamon swirl bread - used decreased both sugars to 1/4 cup each.  B thought the bread was a little dry.

Apricot ginger acorn squash - I didn't care for this


Spicy (turkey) empanadas - the meat is bland and not spicy. I added garlic, worcestershire, pepper.

Southwest potato corn chowder - just ok

Vegetarian korma

April 7 menu

Dinner:

Rainbow roasted vegetables w/ turkey sausage - just used veggies I had on hand (asparagus, pea pods, potato, pepper, onion)

Thurs:

Fast & easy vegan carbonara - it's ok.  Hubby wouldn't call it carbonara

Oven baked chimichangas - these were ok, but they were done after 12-15 minutes

March 31 menu

Breakfast:  

Blueberry pancakes
Turkey breakfast sausage
Hashbrowns


3 ingredient pineapple muffins -worst muffins EVER.  They were chewy and kind of wet.  I didn't imagine these would work out very well, but I had leftover pineapple from the carrot cake.


Lunchbox:   

 

High protein smoothie - i wouldn't call this "high protein" it's just yogurt, more like medium protein.

Soft pretzel

Mixed fruit (strawberries, clementine, apple, pineapple, green grapes, raspberries, blackberries, blueberries)

Chocolate cover almonds


Dinner:


Sun:

"Best" Carrot cake - I wasn't the one to cook it.  It was definitely NOT the best. 

Glazed ham steaks

Roasted asparagus with lemon vinaigrette -I dry roast (no oil) and left the dressing on the side

Checkerboard dinner rolls


Mon:

Vegetarian broccoli soup- this was ok.  A lot healthier than broccoli cheese soup. I don't think I will make it again though.

Bread or cheese sandwich 

Easy spinach salad


Tues:

Asparagus pizza - a decent way to use up extra asparagus


Wed:

Garlic lime chicken it's ok.  I doesn't have a lot of flavor

Red roasted potatoes

Thurs:

Spaghetti and turkey meatball


Fri:

Balsamic glazed onion cheeseburgers with roasted potato wedges - people weren't a fan of the onions.

Quick veggie and rice burrito

March 24 menu

Apple pie muffins (half the sugar, decrease oil to 1/2 cup, and halved the topping)

Broccoli apple salad - I've had better broccoli salads

Sloppy joe biscuit cups - the hard part about these is the the dough puffs up so much when they cook the filling is more of a topping.  I think maybe splitting them biscuits they were thinner would work better (might need the flaky layer dough for that)


Tues:

Grilled cheese

Tomato soup

Salad


Wed:

Quinoa with roasted veggies

Grilled chicken tikka - I adjusted the seasoning so it wasn't as spicy, but I still didn't love it.


Thurs:

Cinnamon sugar radish chips - these better than expected but wouldn't call them good

Budha bowl

Turkey meatballs


Fri:

Pasta w/red sauce

Spinach salad

Garlic bread


Sat:

Black bean and sweet potato burrito - I don't add oil or water to the beans

Southwest sautéed corn

March 17 menu

 Breakfast:  

Vegan banana bread - This was from a post about gut health.  I'm not sure I would call it that because of the all purpose flour, but it's better than most quick bread recipes.  Everyone liked this, it is nice a moist.


Pumpkin cranberry breakfast cookies - these were ok. I'm not sure I would make them again. DD (16) liked them. I wonder how they would be with flax instead of egg white or to replace some flour.

Fresh green beans with garlic - these were pretty  good

Homemade stovetop stuffing - ok. The kids ate (they don't usually eat stuffing) but I didn't love it.

Apple bourbon pork tenderloin


Tues:

Honey garlic chicken starry - sauce doesn't thicken (needs corn starch or something).


Wed:

Salad

Wild rice pilaf -ok. not great

Versatile veggie soup - decent basic recipe

Dinner rolls


Thurs:

Parmasean roasted potatoes

Bacon pea salad

Fish 


Fri:

Pasta primavera with cauliflower sauce- I like that this was a million times healthier than regular primavera. Needs more flavor.  I considered adding red pepper flacks.


Sat:

Glazed sweet potato - meh

Three bean salad - I use 1/3 of the sugar.
