Pepper black bean stir-fry - this had too much smoky flavor for me. It resembled stir-fried baked beans.

Wed:
Rosemary roasted chicken with apples and potatoes - used chicken breast instead of thighs. This was better than i thought it would be (i didn't pick the recipe).
NOTE: I don't have a broiler pan so I used a rimmed baking sheet, lovely covered the apple/potatoes with foil and cut slits in the foil. I placed the chicken on top of the foil and cover the chicken with another piece of foil so it wouldn't dry out while baking. I adjusted the cooking time for boneless breasts. This turned as a good alternative to a roasting pan.
