Fruit & Veggie (CSA) Recipes

This is a quick reference to some recipes that I have tried and were good enough to make again next time I have these veggies or fruits to use up.  This list is listed alphabetical by main produce.


B:
Banana - Banana Bread (Ok not a CSA food but it's hard to find a good banana bread)
Basil -  Caprese Paninis
Beets - Beet Salad w/Goat Cheese
Bok Choy - Bok Choy Salad I recommend adding dried cranberries.
                    Ramen Slaw (using Bok Choy instead of broccoli slaw)

C:
Cabbage: Napa- Baked Spring Rolls (my version used left over chicken and soy sauce instead of            oyster sauce and less ginger)
                 Green Creamy Coleslaw (I used red cabbage & cone cabbage)
Cauliflower - Buffalo

P:
Potato (red) -Grilled New Potato Packet
                      Garlic Roasted Potatoes (my 4 year who doesn't eat potatoes liked these)

R:
Rhubarb - muffins.

S:
Swiss Chard - Fettuccine with Swiss Chard & Garlic 
Squash: Acorn - Rice-Stuffed Acorn Squash (this would be good with any variety)
              spaghetti - Tex-Mex Spaghetti Squash Boat
              summer - Pasta & Tomato Sauce w/Summer Squash  (can be made with zucchini)

Z:
Zucchini  - Turkey Zucchini Burger
