March 24 menu

Apple pie muffins (half the sugar, decrease oil to 1/2 cup, and halved the topping)

Broccoli apple salad - I've had better broccoli salads

Sloppy joe biscuit cups - the hard part about these is the the dough puffs up so much when they cook the filling is more of a topping.  I think maybe splitting them biscuits they were thinner would work better (might need the flaky layer dough for that)


Tues:

Grilled cheese

Tomato soup

Salad


Wed:

Quinoa with roasted veggies

Grilled chicken tikka - I adjusted the seasoning so it wasn't as spicy, but I still didn't love it.


Thurs:

Cinnamon sugar radish chips - these better than expected but wouldn't call them good

Budha bowl

Turkey meatballs


Fri:

Pasta w/red sauce

Spinach salad

Garlic bread


Sat:

Black bean and sweet potato burrito - I don't add oil or water to the beans

Southwest sautéed corn

March 17 menu

 Breakfast:  

Vegan banana bread - This was from a post about gut health.  I'm not sure I would call it that because of the all purpose flour, but it's better than most quick bread recipes.  Everyone liked this, it is nice a moist.


Pumpkin cranberry breakfast cookies - these were ok. I'm not sure I would make them again. DD (16) liked them. I wonder how they would be with flax instead of egg white or to replace some flour.

Fresh green beans with garlic - these were pretty  good

Homemade stovetop stuffing - ok. The kids ate (they don't usually eat stuffing) but I didn't love it.

Apple bourbon pork tenderloin


Tues:

Honey garlic chicken starry - sauce doesn't thicken (needs corn starch or something).


Wed:

Salad

Wild rice pilaf -ok. not great

Versatile veggie soup - decent basic recipe

Dinner rolls


Thurs:

Parmasean roasted potatoes

Bacon pea salad

Fish 


Fri:

Pasta primavera with cauliflower sauce- I like that this was a million times healthier than regular primavera. Needs more flavor.  I considered adding red pepper flacks.


Sat:

Glazed sweet potato - meh

California grilled veggie sandwich

Lemon chicken stir-fry green beans - I didn't use as much oil as stated.  Sauce was kind of blah.


Thurs:

Vegetarian "tuna" (Chickpea) salad croissants

Three bean salad - I use 1/3 of the sugar.  


Fri:

Elton Brown crepes - good easy recipe

Strawberries & bananas

Nutella & almond butter

Yogurt

Hashbrowns

Steak & potatoes

March 3rd menu

 Breakfast:  

Apple cider donut holes

Caprese salid sandwich - good

Honey thyme butternut squash


Mon:

Cheeseburger pasta skillet - not good I had to add a bunch of seasoning.

Mixed veggies


Tues:

Red lentil soup-just ok

Grapes

New England pumpkin walnut bread - 1/2 sugar, and just sprinkled some chocolate and walnuts on top


Wed:

Quinoa side dish

Chicken paillard lemon butter sauce

Peapods


Thurs:

Enchiladas rice casserole

Tacos


Fri:

Vegan meatballs w/ grave - meatballs were ok. I didn't care for the gravy 

Quick and simple meatballs - these were a hit

Roasted potato with green onion and tarragon - just ok


Sat:

Mediterranean sweet potatoes - just ok. not sure i would make again

Apple cinnamon dutch baby - this didn't puff. still edible.

Feb 25 menu

Great northern bean soup - pretty good. added a touch of allspice for more flavor

Chicken fajitas in a flash

Egg and potato sandwich - potatoes need more seasoning (garlic).  Pretty bland sandwich overall


Thurs:

Black bean and couscous salad - could find plain couscous so I used acini di pepe
