Tangy beet dip I only needed 2 beets to make 1 cup. Eat it with club crackers and it tastes oddly like deli ham spread.
Dinner:
cantaloup
Orange glazed meatballs with baby bok choy and brown rice - I thought the sweet pepper sauce might be spicy for the kids, but it wasn't. J said I should make it again sometime.
